Slice 1 bunch of green onions, it should make about 1 cup.
In a small bowl, combine soy sauce, water, rice vinegar, ginger paste, minced garlic, sesame oil, brown sugar, and cornstarch. Whisk together to combine.
Heat a pot of water (abut 4 quarts) over high heat on the stove. When the water is boiling, turn off the heat and add the rice noodles. Allow the noodles to soak for 8-9 minutes then strain.
Cooking Instructions
Heat a skillet over medium high heat. When the pan is hot, spray with nonstick cooking spray.
Add the ground chicken, then season with salt and pepper. Cook until all of the chicken is cooked through.
Pour the sauce mixture over the chicken, be sure to mix the cornstarch up before you pour the sauce in.
