Ingredients

  • 1 ½ lbs thin sliced beef (we used bottom round)
  • 1 tsp + ½ tsp salt (divided)
  • ½ tsp + ¼ tsp pepper (divided)
  • 2 tsp + 1 tsp garlic powder (divided)
  • 1 Tbsp Worcestershire sauce
  • 3 Bell Peppers - whichever colors you like!
  • 1 onion
  • 1 Tbsp olive oil
  • 1 ½ cups rice
  • 6 slices provolone cheese
  • Cooking spray

Cooking Instructions

  1. Cook 1 ½ cups of rice - see rice cooking instructions
  2. Wash then slice bell peppers and onion into ¼ inch thick slices.
  3. Season veggies with olive oil, ½ tsp salt, ¼ tsp pepper, and 1 tsp garlic powder.
  4. Cut thin sliced beef into bite sized strips, then season with 1 tsp salt, ½ tsp pepper, 2 tsp garlic powder, and 1 Tbsp Worcestershire sauce.
  5. Heat a large skillet over medium-high heat. When hot, spray with cooking spray and add beef.
  6. Cook the beef until it’s completely browned and most of the liquid has cooked out of the pan. Remove the beef from the pan and set aside.
  7. Spray the pan lightly again with cooking spray, then add the veggie mix to the pan. Cook them until they begin to soften, then remove from heat.
  8. Separate into 6 equal portions:
  9. ½ cup of rice
  10. 80 g of beef
  11. 80 g of veggies
  12. 1 slice of cheese each.

For each serving:

  • ½ cup of rice 
  • 80 g beef
  • 80 g pepper and onion mix
  • 1 slice provolone cheese
