1 ½ lbs boneless, skinless chicken breast

5.2 oz boursin cheese, caramelized onion (1 unit)

3 Tbsp minced garlic

2 tsp Italian seasoning

1 Tbsp olive oil

½ cup whole milk

2 Roma Tomatoes

8oz fresh zucchini

16 oz Angel Hair Pasta

Preparation Instructions

  • Preheat oven to 375  F. 
  • Trim, filet, and weigh out 1 ½  lbs of chicken. Season with salt and pepper.
  • In a 9 x 13 inch baking dish, spray with cooking spray, then place the boursin cheese in the middle of the pan.
  • Wash tomatoes and zucchini then dice and add to the dish. 
  • Add minced garlic, italian seasoning, and olive oil to the dish, then stir to combine.

Cooking Instructions

  • Heat a pan over medium high heat, then spray with cooking spray. Sear both sides of each chicken filet then remove from pan an set aside.
  • Place seared chicken on top of the vegetables(around the cheese) in the pan, and bake for 15-20 minutes, or until the chicken is cooked through.
  • Bring 4 quarts of water to a boil. When it is at a rolling boil, reduce heat to medium high and add pasta. Cook for 8-9 min, or until al dente (if you are using this for meal prep, cook for 6-8 min or until it is just before al dente because it will be microwaved later)
  • Remove the dish from the oven when the chicken is cooked through (165 F) and set chicken aside on a clean plate.
  • Add ½ cup whole milk to the pan, then stir to combine all the ingredients. Return to the oven for an additional 10 min. 
  • Remove sauce from the oven then add ¼ cup pasta water and stir to combine. Add in pasta and toss to coat. 
  • Slice Chicken and allow to cool.
