  • 2 lbs boneless skinless chicken breasts
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 Tbsp brown sugar
  • 1 Tbsp + 1 Tbsp olive oil (divided)
  • 1 tsp onion powder
  • 3 bell peppers - any mix of • 1 tsp garlic powder colors you'd like
  • ½ tsp cumin
  • 1 onion
  • 1½ cups rice
  • 1 Tbsp chili powder
  • 3 oz shredded fiesta style cheese
  • 1 tsp salt
  • 1 tsp paprika
  • 6 tbsp fat free Greek yogurt
  • 1 tsp dried oregano

Cooking Instructions

  1. PREHEAT YOUR OVEN TO 375 F.
  2. COOK YOUR RICE - SEE RICE COOKING GUIDE FOR INSTRUCTIONS.
  3. MIX ALL SPICES TOGETHER - CHILI POWDER, SALT, PAPRIKA, OREGANO, BROWN SUGAR, ONION POWDER, GARLIC POWDER, AND CUMIN.
  4. WASH AND SLICE BELL PEPPERS INTO STRIPS, THEN PEEL THE ONION AND SLICE INTO STRIPS.
  5. TRIM, THEN WEIGH AND FILET THE CHICKEN BREASTS.
  6. ADD 1 TBSP OF OLIVE OIL TO THE VEGETABLES AND 1 TBSP OF OLIVE OIL TO THE CHICKEN BREASTS.
  7. SPLIT THE SPICE MIX INTO TWO EQUAL PORTIONS, THEN PUT HALF ON THE SLICED VEGETABLES AND HALF ON THE CHICKEN.
  8. LAY THE VEGETABLES OUT ON A RIMMED BAKING SHEET THAT IS LINED WITH PARCHMENT PAPER OR SPRAYED WITH COOKING SPRAY.
  9. LAYER THE CHICKEN OVER THE TOP OF THE VEGETABLES AND BAKE FOR 30-40 MINUTES, OR UNTIL THE CHICKEN IS COOKED THROUGH AND THE INTERNAL TEMPERATURE IS 165 F. BE CAREFUL WHEN REMOVING IT FROM THE OVEN, THERE WILL BE SOME LIQUID IN THE PAN.
  10. WHEN THE CHICKEN IS DONE, LET REST FOR AT LEAST 3 MINUTES THEN SLICE.

For each serving:

  • ½ cup of rice
  • 115 g of chicken
  • 80 g of vegetables
  • 1/2 oz cheese - in 2 oz cup or sprinkled on top
  • 1 oz Greek Yogurt - in 2 oz cup (remove before you microwave)
