Ingredients

2 lbs thin sliced beef (we used bottom round)

2 Tbsp olive oil

2 tsp black pepper

¼ tsp salt

1 onion, sliced

3 bell peppers, sliced

2 Tbsp corn starch

2 Tbsp soy sauce

2 Tbsp fish sauce

1 cup beef broth

2 Tbsp minced garlic

1 tsp ginger puree

1 ½ cups uncooked rice

Preparation Instructions

  • Cook 1 ½ cups of rice - see rice cooking instructions
  • Wash then slice bell peppers and onion into ¼ inch thick slices. 
  • Cut beef into bite size pieces, then season with 1 tsp black pepper and ¼ tsp salt.  
  • In a bowl, combine 1 tsp black pepper, cornstarch, soy sauce, fish sauce, beef broth, minced garlic, and ginger puree. 

Cooking Instructions

  • Heat a large skillet over medium-high heat. When hot, spray with cooking spray and add beef. 
  • Cook the beef until it’s completely browned and most of the liquid has cooked out of the pan. Remove the beef from the pan and set aside. 
  • Spray the pan lightly again with cooking spray, then add the veggie mix to the pan. Cook them until they begin to soften, then add the beef back into the pan. 
  • Pour the sauce mixture over the top, and allow to cook until the sauce begins to thicken. 

For each Serving: 

  • ½ cup of rice
  • 180 g of beef and veggie mixture
